Fall Harvest Salad

Ingredients

  • Red baby butter + arugula lettuce mix

  • 1 sugarbee apple

  • 1/2 Red onion

  • 1/4 cup pine nuts

  • 1/4 cup pecans

  • Crutons (Optional)

Steps

1. Wash the greens thoroughly and set them aside to dry.
2. Chop the apple into small squares.
3. Slice the red onion into thin strips.
4. Roast the pine nuts lightly in a dry skillet over medium heat until they’re golden and fragrant.
5. In a large bowl, combine the greens, chopped apple, sliced red onion, and toasted pine nuts.
6. Drizzle your chosen vinaigrette over the salad (lemon garlic vinegar dressing works great).
7. Toss everything gently to coat evenly and then serve!!
