Snickerdoodle Cookies

Ingredients
2 3/4 cup All purpose flour
2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
One cup butter (room temp)
1 1/4 cup granulated sugar
1/4 cup brown sugar
Two eggs (room temp)
1/2 teaspoon vanilla extract
To make these cookies, begin by combining all the dry ingredients—flour, baking powder, salt, and cinnamon—in one bowl.
In a separate bowl, use an electric mixer to cream together the brown sugar until smooth, then add the eggs and vanilla extract and continue mixing.
Gradually incorporate the dry ingredients into the wet mixture until a uniform dough forms. Chill the dough in the refrigerator for 10 to 15 minutes.
While the dough is chilling, mix 3 tablespoons of sugar with 2 1/2 tablespoons of cinnamon on a plate.
Once chilled, roll the dough into balls, then press each ball into the cinnamon-sugar mixture before placing them on a cookie sheet. Optionally, sprinkle a little extra cinnamon on top of each cookie before baking. Bake the cookies at 350°F for 8 to 10 minutes until they are lightly golden.
